Updated Sept. 19, 2022
Overview
Total Time: 30 minutes (includes prep and baking)
Servings: 4
Ingredients
Mushrooms: 8 ounces (4 cups) white button or cremini mushrooms, halved or quartered if large
Tomatoes: 4 small plum tomatoes, halved lengthwise
Olive Oil: 2 tablespoons extra-virgin olive oil (plus more for drizzling)
Worcestershire Sauce: 1 teaspoon (plus more for serving)
Herbs: 3 fresh thyme sprigs (or 1/4 teaspoon dried thyme if unavailable)
Seasonings: Salt and freshly ground black pepper (to taste)
Sausages: 8 breakfast sausage links (cooked or uncooked; plant-based options work well)
Eggs: 4 large eggs
Toast: Butter for toasting (for serving)
Preparation
Step 1: Preheat & Prep
Preheat oven to 450°F (230°C). Line a rimmed sheet pan with parchment paper for easy cleanup (non-stick pans also work). In a medium bowl, toss mushrooms, halved tomatoes, olive oil, Worcestershire sauce, thyme sprigs, and a pinch each of salt and pepper until evenly coated.
Step 2: Roast Sausages & Vegetables
Arrange sausage links in a single layer on the sheet pan. Spread the seasoned mushrooms and tomatoes around the sausages. Pro Tip: To prevent smoke, use a light olive oil coating (2 tbsp is sufficient for 4 cups of vegetables) and ensure the pan is clean. Roast for 15–20 minutes, tossing vegetables halfway through to ensure even browning and crisping.
Step 3: Add & Roast Eggs
Once vegetables/sausages are browned, use a spatula to push them to one side, creating space for eggs. Drizzle the empty side with a tiny bit of olive oil (just enough to coat the pan). Crack eggs into the oiled space, season lightly with salt/pepper. Return to oven and roast 3–5 minutes: whites set, yolks runny (add 1–2 minutes more for medium/hard yolks).
Step 4: Assemble & Serve
Gently cut eggs with a spatula, then slide everything onto plates (discard thyme sprigs). Drizzle with Worcestershire, extra salt/pepper, and serve with buttered toast.
Tips & Variations
Vegan Adaptation: Swap plant-based sausages and vegan Worcestershire, tamari, or coconut amino acids.
Smoke Prevention: Reduce oven to 425°F (218°C) if smoke occurs; use a non-stick pan to minimize oil splatters.
Traditional Touches: Add bacon (rendered fat) or baked beans for classic English breakfast elements.
