Mango Soft Serve

Updated July 31, 2025

Overview

  • Total Time: 10 minutes (5 minutes prep, 5 minutes cook)

  • Servings: 4–6

Equipment

  • High-speed blender (e.g., Vitamix, Blendtec) or food processor

  • Spatula for scraping blender sides

  • Airtight container (for freezing)

Ingredients

  • 20 ounces (567g) frozen mango chunks (or seasonal alternatives: strawberries, blueberries, peaches, or pineapples)

  • 1 (14-ounce/397g) can sweetened condensed milk (adjust for sweetness preference)

  • Optional additions:

  • 1 tsp lime zest (for brightness)

  • 1 tbsp lime juice (for tartness)

  • ½ cup plain yogurt (to reduce sweetness)

  • 2 tbsp vodka (to aid scoopability)

Preparation Steps

1. Prep Ingredients

Ensure frozen mango chunks are completely frozen (no partial thawing). If using a less powerful blender, partially thaw mango for 1–2 minutes under cold water to soften slightly, reducing blending time and preventing overheating.

2. Blend the Base

Add frozen mango and sweetened condensed milk to the blender.

  • For high-speed blenders (e.g., Vitamix):

Start on low speed, then gradually increase to high. Blend for 1–2 minutes, pausing every 30 seconds to scrape down the sides with a spatula. The texture should be smooth, airy, and creamy—avoid over-blending (≤1.5 minutes total).

  • For food processors:

Pulse in short bursts (5–10 seconds) to break down the fruit, then blend on high for 1–2 minutes, scraping the bowl midway.

3. Freeze for Scoopability (Optional)

For a firm, scoopable texture:

  • Transfer the blended mixture to a loaf pan or airtight container.

  • Cover tightly and freeze for 1 hour (until firm enough to scoop).

  • For storage: Freeze up to 7 days. When ready to serve, let the mixture sit at room temperature for 5–10 minutes to soften.

4. Serve & Customize

  • Soft-serve: Enjoy immediately (no scooping needed).

  • Toppings: Add chopped salted almonds, lime zest, or a drizzle of sweetened condensed coconut milk (e.g., Coco Lopez).

  • Tart twist: Add 1 tbsp lime juice + ½ cup plain yogurt to the blender during Step 2.

Chef’s Tips & Troubleshooting

Blender Longevity

  • Avoid overheating: If using a Vitamix/Blendtec, pre-add condensed milk first, then add partially thawed mango gradually in batches.

  • Cooling breaks: If the blender stalls mid-blend, stop immediately and let it rest 10 minutes before restarting.

Sweetness Adjustments

  • Reduce condensed milk by ¼ cup and replace with coconut cream (e.g., Coco Lopez) for a dairy-free, less-sweet option.

  • Add 1 tsp lime zest + 1 tbsp lime juice to balance richness.

User Experiences & Variations

  • Vegan: Swap sweetened condensed milk with sweetened condensed coconut milk (Coco Lopez).

  • Scoopable Fix: Add 2 tbsp vodka to prevent melting during serving.

Note: Blender safety is critical—avoid full-speed operation. If the blender overheats, use the lowest setting and pre-add liquid first, as reported by home cooks. Adjust ingredients to taste, especially for sweetness.

Happy blending!
